Lemon Myrtle is undoubtedly the best Australian Rainforest Spice, with its delightful Lemon, Lime and Lemongrass aroma and flavour it adds beautifully to baked fish or any seafood dish, Thai cooking, soups, cheesecake recipes and pancake batter. Also great infused in vinegar, olive oil or as the feature in a sweet chili sauce. Makes a refreshing tea, especially well suited to 'lift' a green tea or iced tea. Lemon Myrtle is the worlds richest source of citral which is also the essential oil found in Lemongrass.

Ingredients: Mechanically dried premium (high citral) Lemon Myrtle Backhousia citriodora Leaf (100%), 1.6mm flake size.

Using Your Lemon Mrytle: Lemon Myrtle is another of the more versatile of our native spices. You can use it anywhere you would use Lemongrass, in Thai cooking, in soups and is especially good sprinkled over fish before baking. Add to the stuffing of turkey or chicken and the meat will be infused with the delicious aroma of Lemon Myrtle. Also makes a good tea, either by itself or with a green tea, be sure to allow to infuse for at least 5 minutes. Also good added to pancake batter (1-2teasp), add 2 teaspoons to your favouite Cheesecake filling and allow to sit overnight before serving, Delicious!
